An old-fashioned way to eat shrimp.
Ingredients
* 1 sm. onion, sliced * 1 sm. carrot, chopped * 1/4 tsp. thyme * 1 bay laef * tsp. chopped parsley * 1 1/2 Tbs. butter * 1 1/2 lbs. sm. shrimps * 3 Tbs. stock * 1/2 C. dry red wine * 3 Tbs. rice * 3 C. stock * 2 C. stock * 1 dash cayenne pepper * 1 Tbs. butter
Directions
Put onion, carrot, thyme, bay leaf, parsley and butter in a skillet and brown. Add shrimps, which should have been shelled and deveined. Add 3 Tbs. stock and cook for 15 minutes. Add wine, cover skillet and cook for 15 more minutes. Remove from heat. Cook rice in boiling stock for 20 minutes until very well done. Pass rice through sieve. Remove shrimp from gravy and run gravy through sieve. Mix shrimps, gravy and rice together. Add 2 C. stock, cayenne and butter. Heat well and serve.
