Salted Codfish Soup PDF Print E-mail

A delicious recipe to keep you warm.

Ingredients

* 1 1/2 lbs. cod, soaked
* 1/2 C. olive oil
* 2 sm. onions, sliced
* 2 garlic cloves
* 1 celery talk, diced
* 1 bay leaf
* 1/2 tsp. thyme
* 1 tsp. chopped parsley
* 1 sm. can tomatoes
* 1/2 C. dry white wine
* 3 med. potatoes, sliced
* 3 C. water 1/2 tsp. pepper

Directions

Cut soaked cod into 4-inch pieces. Put oil, onion and garlic in a large pan and brown. Add celery, bay lea, thyme and parsley and continue browning. add tomatoes and cook 5 minutes. Add wine, potatoes and water. Cook 10 minutes. Add fish, lower heat, cover pan and cook for 40 minutes or until potatoes and cod are done. Add pepper.

Serves 4.
