Bread and Parmesan Soup PDF Print E-mail

This Italian soup is simple!

Ingredients

* 8 slices French bread
* 1/2 C. butter
* 1 qt. broth
* 4 eggs
* 1/8 tsp. salt
* 2 Tbs. grated Parmesan cheese

Directions

Melt the butter in a frying pan. Fry bread in it until golden on both sides. Bring broth to a boil. Place 2 slices of bread in each soup dish. Top with a whole egg and sprinkle 1/2 Tbs. cheese on each egg. Pour 1/4 of the boiling broth into each dish. Make sure that the egg doesn't break. Serves 4.
