This is a hearty Italian soup. Serve with bread and it's a full meal. The recipe was originally from my husband's Aunt Tina. This can be done on regular stove or crock pot!
Ingredients
* 1 1/2 lb. stew beef, ground beef or italian sausage, browned * 1 lb. orzo pasta, half cooked * 1 8 oz. can tomato sauce * 1 14 oz. can tomatoes * 2 boxes or 3 cans beef broth * 3 C. water * 2 carrots, cut into bite size pieces * 2 celery stalks, cut into bite size pieces * 1 medium onion roughly chopped * 3 medium red or white potatos * 1 Tbs. minced or pressed garlic * 2 tsp. pepper * Salt to taste
Directions
Basically you stir together all ingredients and simmer on the stove on medium-low for 45 minutes, stirring occasionally. If you want to do the crockpot version, stir in fully cooked pasta 20-30 minutes before you want to eat.
