This is a terrific side dish to any Italian meal. Makes 4-6 side dish helpings.
Ingredients
* 6 lg. carrots * 2 Tbs. olive oil * 1/4 C. fresh creamy butter * 2 tsp. caraway seeds * 1 tsp. salt * 1/2 tsp. fresh ground pepper * 2 Tbs. chopped parsley
Directions
Preheat oven to 400 degrees. Cut off ends of carrots, then lengthwise into halves, and then into cubes. Oil a baking dish with a little oil oil. Arrange carrots in the dish and add all the rest of your ingredients except parsley. Cover. Bake for 30 minutes. Uncover and bake for 20 more minutes. Remove from oven and sprinkle the parsley on top.
