Although this might be one of the most used Italian mushroom recipes you can spice up the flavor by trying exotic mushroom varieties. Garlic parsley mushrooms are typically served as a side dish, but my family really likes mushrooms, so we double the recipe and serve some early with our appetizers.
Ingredients
* 1 (10 to 12 oz.) package white mushrooms * 1/4 C. olive oil * 2 Tbs. chopped fresh flat-leaf parsley * 2 large garlic cloves, thinly sliced * salt and freshly ground black pepper
Directions
Place the mushrooms in a colander and rinse them quickly under cold running water. Drain the mushrooms and pat them dry. Cut the mushrooms into halves or quarters if large. trim off the ends if they look dry.
In a large skillet, heat the oil over medium heat. Add the mushrooms. Cook, stirring often until the mushroom are browned, 8 to 10 minutes. Add the parsley, garlic, salt, and pepper. Cook until the garlic is golden, about 2 minutes or more. Serve hot. |
