Southern Lemon Broccoli PDF Print E-mail

Always serve my lemon broccoli at room temperature, just like they do in Southern Italy. This is the best way to fully enjoy this delicious Italian side dish.

 

Ingredients

* 1 lb. broccoli
* salt
* 1/4 C. extra-virgin olive oil
* 1 to 2 Tbs. fresh lemon juice
* lemon wedges, for garnish

Directions

Cut the broccoli into large florets. Trim off the ends of the stems, and peel off the tough skin with a swivel-blade vegetable peeler. Cut thick stems crosswise into 1/4 inch slices.

Bring a large pot of water to a boil. Add the broccoli and salt to taste. Cook until the broccoli is tender, 5 to 7 minutes. Drain and cool slightly under cold running water.

Drizzle the broccoli with the oil and lemon juice. Garnish with the lemon wedges. Serve at room temperature.
