Prosciutto Zucchini PDF Print E-mail

Serve this as a side to pasta.

Ingredients

* 1 1/2 lbs. sm zucchini
* 1 med. onion, chopped
* 2 Tbs. olive oil
* 1 garlic clove, chopped
* 1/2 tsp. dried thyme
* salt
* pepper
* 3 thin slices Italian prosciutto, cut crosswise into thin strips

Directions

Scrub zucchini clean with a brush under cold water. Trim ends off. Cut zucchini into 1/8-inch slices. In a large skillet, cook onion in the oil over medium heat. Cook, stirring, until onion is tender and golden. Should take 10 minutes. Add garlic and thyme and cook for another minute. Stir in the zucchini slices and salt and pepper to taste. Cook 5 minutes. Add prosciutto and cook until zucchini are tender, about 2 more minutes. Serve.

Serves 4.
