The title might sound a little contradictory, but this sauce is perfect!
Ingredients
* 4 Tbs. butter * 1/4 C. olive oil * 4 oz. Italian prosciutto, chopped * 2 med. carrots * 2 med. red onions * 1 lg. celery rib, chopped * 1/4 C. chopped parsley * 1 lb. boneless beef chuck, cut into 2-inch pieces * 8 oz. Italian sweet sausages * 2 lbs. tomatoes, chopped * 2 C. beef broth * 1/2 C. dry red wine * 1/2 tsp. grated lemon zest * cinnamon * nutmeg * salt * pepper
Directions
In a large saucepan, melt the butter with olive oil over medium heat. Add prosciutto and chopped vegetable and cook for 15 minutes. Make sure to stir frequently. Stir in meats, and cook for 20 minutes or until browned. Add the tomatoes, broth, wine, lemon zest and last four ingredients to taste. Bring mixture to a simmer. Cook until sauce is thickened, should take 2 hours. Remove beef chunks from the pot. Place them on a cutting board and chop into small pieces. Stir chopped meat into the sauce. Serve hot.
