Tomato Onion Sauce PDF Print E-mail

If you're not big on onions, try shallots instead.

Ingredients

* 3 Tbs. unsalted butter
* 1 Tbs. olive oil
* 1 sm. onion, finely chopped
* 3 lbs. plum tomatoes, peeled, seeded and chopped
* salt
* pepper

Directions

In a medium, heavy saucepan, melt the butter and oil over medium heat. Add onion, cook and stir a bit, until onion is golden and tender, about 7 minutes. Add tomatoes and salt and pepper. Bring sauce to a simmer and cook 20 minutes or until thickened.

Makes 2 1/2 C.
