Useful Vegetable Sauce PDF Print E-mail

A simple sauce recipe for vegetarians.

Ingredients

* 1/4 C. olive oil
* 1 med. yellow onion, finely chopped
* 2 sm. carrots, peeled and finely chopped
* 2 garlic cloves, finely chopped
* 4 basil leaves, chopped
* 1 sm. dried chili pepper, crushed
* 1 C. dry white wine
* 6 lbs. plum tomatoes, peeled, seeded and chopped

Directions

In a large saucepan, combine oil, onion, carrots, garlic, basil and chili. Cook over medium heat, stirring occasionally, until the vegetables are golden and tender, 10 minutes. Add the wine and bring to a simmer. Cook for 1 minutes. Puree tomatoes in a food processor. Bring to a simmer and turn heat to low. Season to taste with salt. Cook, stirring occasionally, for 30 minutes. Serve hot.
