Anchovy Sauce PDF Print E-mail

This sauce smells so good!

Ingredients

* 2 Tbs. butter
* 1 Tbs. flour
* 1 1/2 C. water
* 1 tsp. meat extract
* 3 tsp. anchovy paste
* 1/4 C. butter
* 2 sweet gherkins, chopped
* 1/2 Tbs. capers
* 1 Tbs. chopped parsley
* 1/8 tsp. pepper

Directions

Melt butter in a saucepan. Blend in flour and cook for 1 minute. add water and meat extract and cook until slightly thickened. Remove from fire and keep warm. Blend together the anchovy paste and butter. Add to sauce a little a time, beating with rotary beater 1 minute after each addition. Add gherkins, capers, parsley and pepper. Serve on fish.
