Every great meal needs a tasty starter, try this capon starter salad served before a pasta entree. The recipe serves 4-6.
Ingredients
* 2 C. diced, cooked capon * 1 can (5 oz.) pimientos * 2 C. diced celery * 1 1/2 C. mayonnaise * salt and fresh ground pepper
Directions
Pick over the poached stuffed capon and dice all the trimmings and any meat from wings, drumsticks, or carcass. Drain the pimientos and dice them. Mix capon, celery, pimientos and mayonnaise and season with salt and pepper to taste.
