The arugula adds some healthy green to this salad.
Ingredients
* 1 lg. bunch arugula * 2 Tbs. olive oil * 1 Tbs. lemon juice * salt * pepper * 1/2 C. black cured olives, pitted and cut into 2 pieces * 1 3-oz. can sardines in oil * 2 green onions, cut into thin slices
Directions
Trim the rough stems of the arugula and discard any bruised leaves. Wash arugula in cool water. Dry well and tear into bite-size pieces. In a large bowl, whisk together the oil, lemon juice and salt and pepper to taste. Add the arugula, olives, sardines and green onions and toss well. Serve.
