Italian Tomato and Avocado Salad PDF Print E-mail

Two of the best vegetables comes together in this yummy salad.

Ingredients

* 1 med. head leaf lettuce
* 1/4 C. olive oil
* 2 Tbs. lemon juice
* 1 tsp. Dijon mustard
* salt to taste
* pepper to taste
* 6 basil leaves, torn
* 1 Tbs. chopped fresh tarragon
* 2 sm. ripe avocados, peeled and sliced
* 4 oz. provolone, sliced
* 2 med. tomatoes, sliced

Directions

Trim lettuce and discard any outer leaves. Wash it in cold water and dry it. Tear into bite-size pieces. Should make about 8 C. In a small bowl, whisk lemon juice, oil, mustard, salt and pepper. In a platter, toss lettuce, basil and tarragon together. Add half the dressing and toss well. Arrange avocado, provolone and tomato slices alternately on top. Drizzle with the rest of the dressing and serve.
