For a dish that doesn't include meat, omit the salt pork and add 2 more tablespoons of butter.
Ingredients
* 1 C. uncooked rice * 2 Tbs. tomato paste * 1/2 C. dry white wine * 2 Tbs. olive oil * 1/4 C. butter * 2 oz. salt pork, diced * 1/2 lb. onions, peeled and diced * 1 lg. garlic clove, mashed * 1/3 tsp. freshly ground black pepper * 2 1/2 C. boiling water * 1 lb. Italian tuna in olive oil * salt * 1/4 C. parmesan cheese
Directions
Soak the rice in lukewarm water for 15 minutes, then drain. Stir the tomato paste into the wine. Put olive oil, butter and salt pork in a skillet and haet. Add onions and cook until medium brown. Add garlic, pepper and wine with tomato paste. Stir and cook for 2 minutes. Then add water, stir and cook for 3 minutes. Add drained rice, stir, cover and simmer for 15-20 minutes. Add tuna and cook for 2 minutes. Put on a warm platter and sprinkle with cheese.
