Chicken Liver Risotto PDF Print E-mail

Ingredients

* 1/4 C. butter
* 2 oz. salt pork, diced
* 2 Tbs. olive oil
* 3/4 lb. onions, peeled and diced
* 4 frozen chicken livers, finely chopped
* 1/2 tsp. salt
* 1/3 tsp. freshly ground black pepper
* 1 C. uncooked rice
* 3 C. boiled chicken broth
* 1/8 tsp. ground saffron

Directions

Pour butter, salt pork and olive oil in a skillet and heat. Add onions and cook until medium brown. Add chopped livers, salt and pepper. Stir and brown for 5 minutes. Add rice, stir well, and cook for 2 minutes. Add the boiling broth. Stir well, cover, and simmer for 15-20 minutes. Test for doneness. Salt. Add saffron and stir.

Serves 4-6.
