Tomatoes and Eggs PDF Print E-mail

For a light Italian breakfast or brunch meal try these tomatoes and eggs. Toast some thinly sliced Italian bread, put one or 2 slices on each plate and spoon tomatoes and eggs on top.

Ingredients

* 2 Tbs. olive oil
* 2 Tbs. butter
* 1 med. onion, diced
* 2 med. tomatoes, sliced thin
* 4 fresh eggs, beaten
* 2 Tbs. freshly grated Parmesan cheese
* salt and pepper

Directions

Place olive oil and butter in a skillet and heat. Add the onion and cook to medium brown. Add tomatoes and cook for 10 minutes. Stir in eggs and cook for 2 minutes. Sprinkle cheese over top. Add salt and pepper to taste.
