The delightful flavor from the red peppers really makes this calzone recipe unforgettable. For even more flavor try using a variety of mushrooms.
Ingredients
* 1 1/2 C. flour * 1 Tbs. olive oil * 1 Tbs. salt * 1 pkg. yeast dissolved in 3/4 C. lukewarm water * FILLING: * 1/2 lb. sliced mushrooms, sauteed in oil * 1 clove crushed garlic * pinch of parsley * 1 C. chopped roasted red peppers * 4 oz. cubed mozzarella cheese * cut up pepperoni, prosciutto or grilled chicken * marinara sauce or pizza sauce
Directions
Add flour, salt, oil and yeast mixture in a bowl. Mix with fork until it becomes a soft paste. Then add a little more flour so it is dough like, not sticky. Knead dough 5-7 minutes. Put in a bowl and cover. Let rise 1 1/2 hours or until 3 times its size. Preheat oven to 450 degrees. Roll out dough with rolling pin onto floured surface into 2 round thin shapes, approximately 1/4 inch thick. Put on ungreased cookie sheet. Fill with calzone filling. Fold over, seal and crimp edges. Brush with beaten egg. Bake until lightly brown at 450 degrees for 20-25 minutes.
