| Wonderful Walnut Spaghetti |

The flavor of the walnuts make this spaghetti dish delicious, versatile, and satisfying. They provide a texture and flavor that enhances the dish greatly. Ingredients * 1/4 C. olive oil * 3 lg. garlic cloves, lightly crushed * 1 C. walnuts, finely chopped * salt * 1 lb. spaghetti, thin * 1/2 C. freshly grated Pecorino Romano * freshly ground black pepper * 2 Tbs. chopped fresh parsley Directions Pour the oil into a large skillet. Add the garlic and cook over medium heat for 4-5 minutes. Remove the garlic. Stir in the walnuts and cook about 5 minutes. Bring 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt and then the pasta. Cook over high heat, stirring frequently, until the pasta is al dente. Drain the pasta reserving some of the cooking water. Toss the pasta with the nut sauce and just enough of the cooking water to keep it moist. Add the cheese and generous grinding of black pepper. Toss well, add the parsley and serve immediately. |
