Hot Garlic Linguine PDF Print E-mail

Make sure to use a full-flavored olive oil in this hot pepper pasta dish to get the best results. This recipe will serve you and 4-5 of your friends.

Ingredients

* 1/2 C. extra-virgin olive oil
* 4-6 lg. garlic cloves, thinly sliced
* 1/2 tsp. crushed red pepper
* 1/3 C. chopped parley
* salt
* 1 lb. linguine

Directions

Pour oil into a large skillet. Add the garlic and crushed red pepper. Cook over medium heat, stirring often, for 4-5 minutes. Stir in parsley and turn off heat. Bring 4 quarts of cold water to a boil. Add 2 tablespoons salt, then pasta. Cook over high heat, stirring frequently, until the pasta is al dente. Set aside some of the cooking water. Drain the pasta and add it to the skillet with the sauce. Cook over medium heat, tossing until the pasta is well coated. Add a little of the cooking water and serve immediately.
