This is a great example of Italian comfort food.
Ingredients
* 1/4 C. olive oil * 1 med. carrot, chopped * 1 med. celery rib, chopped * 1 med. onion, chopped * 2 garlic cloves, chopped * 2 Tbs. chopped parsley * 3 Tbs. tomato paste * salt * pepper * 1 1/2 lbs. potatoes, peeled and chopped * 1 lb. small shell pasta * 1/2 C. grated parmesan cheese
Directions
Pour oil into a large saucepan and add the chopped ingredients except the potatoes. Cook over medium heat, stirring occasionally, until tender and golden, about 15-20 minutes. Stir in the tomato paste and salt and pepper to taste. Add the potatoes and 4 C. water. Bring to a simmer and cook until potatoes are tender, 30 minutes. Crush potatoes with the back of a spoon. Bring 4 qts. water to a boil. Add 2 Tbs. salt then pasta. Stir well. Cook until pasta is al dente. Stir pasta into the potato mixture. Stir in cheese and serve.
