This is a fancy lasagna recipe that will please a crowd.
Ingredients
* 1 lb. curly edge lasagna * 1 lb. pork shoulder * 1 Tbs. olive oil * 1/2 onion, minced * 1 garlic clove, sliced * 1 tsp. minced parsley * 1/2 tsp. salt * 1/2 tsp. pepper * 1 1/2 cans tomato paste * 2 C. warm water * 5 qts. water * 3 tsp. salt * 1 lb. ricotta * 1 Tbs. hot water * 4 Tbs. grated parmesan cheese
Directions
Place pork in saucepan with oil, onion, garlic and parsley. Brown on all sides. Add salt, pepper and tomato paste diluted with 2 C. warm water. Cover pan and cook for 2 hours, adding a little water from time to time. Remove pork from sauce and keep warm.
In another pan, bring water to a boil, add salt and drop in lasagna. Cook for 15 minutes, stirring constantly to prevent lasagna from sticking together. Drain. Mix ricotta with 1 Tbs. warm water, making a soft paste.
In a casserole, arrange lasagna in layers, alternative between sauce, ricotta and parmesan, until lasagna is all used, and ending with a layer of sauce, ricotta and parmesan. Bake in oven at 375 degrees for 20 minutes and serve. Pork should be the second course.
