Though salmon isn't a traditional Italian fish, Italians have incorporated it into their cooking as it has been shipped to Italy.
Ingredients
* 4 med. white potatoes * 1 C. peeled and trimmed baby carrots * 8 whole shallots, peeled * 3 Tbs. olive oil * salt * pepper * 8 oz. asparagus, cut into 2-inch lengths * 4 salmon steaks * 2 Tbs. chopped fresh herbs
Directions
Preheat oven to 425 degrees. Cut potatoes into thick slices. Pat dry. In a large roasting pan, combine potatoes, carrots and shallots. Add oil and salt and pepper to taste. Toss well. Spread the vegetables in the pan and bake for 20 minutes. Stir the vegetables and add asparagus. Bake for 10 more minutes. Sprinkle the salmon with salt and pepper. Push vegetables to the sides of the pan. Add salmon steaks. Bake 7 more minutes. Sprinkle with herbs and serve.
