The onions and berries are a delight!
Ingredients
* 3 Tbs. olive oil * 4 salmon steaks, 3/4-inch thick * salt * pepper * 2 med. red onions, thinly sliced * 1/2 tsp. juniper berries * 1/2 C. dry white wine
Directions
In a medium skillet, heat the oil over medium heat. Pat steaks dry and put them in the pan. Cook for 3 minutes or until browned. Then the salmon and brown on the other side, another 2 minutes. With a spatula, remove the salmon steaks and put them on a plate. Sprinkle with salt and pepper. Add onions, berries and salt to taste to the pan. Add wine and bring to a simmer. Lower the heat and cover the pan. Cook for 20 minutes. Return the salmon to the pan and spoon the onions over the fish. Turn the heat to medium. Cover and cook for 2 more minutes. Serve.
