Serve this dish with some creamy rice or risotto.
Ingredients
* 2 Tbs. olive oil * 1 med. onion, thinly sliced * pinch crushed red pepper * 2 C. canned tomatoes, chopped * pinch dried oregano, crumbled * salt * 1 1/4 lbs. grouper fillets, cut into pieces * 1/2 tsp. grated lemon zest
Directions
Pour oil into a medium skillet. Add the onion and red pepper. Cook over medium heat until onion is tender and golden. Should take 10 minutes. Add tomatoes, oregano and salt and simmer until sauce is thickened. Should take 15 minutes. Rinse fish and pat dry, then sprinkle with salt. Add fish to the pan and baste it with sauce. Cover and cook 8-10 minutes. With a slotted spoon, transfer fish to a serving platter. Remove sauce from the heat and stir in lemon zest. Spoon sauce over the fish and serve.
