Don't be scared! This dish is delicious!
Ingredients
* 1 lb. chicken livers * 3 Tbs. butter * salt * pepper * 1 tsp. chopped sage leaves * 4 thin slices prosciutto, cut crosswise into slivers * 2 Tbs. Marsala * 2 Tbs. chopped parsley
Directions
Trim the chicken livers, cutting away connecting fibers. Cut each liver into 3 pieces. In a large skillet, melt 2 Tbs. butter over medium heat. Rinse and pat the liver pieces dry. Add them to the skillet. Sprinkle with salt and pepper. Add sage and prosciutto. Cook, turning the livers frequently until lightly browned, about 5 minutes. Transfer livers to a plate. Add the Marsala to teh pan and raise the heat. Bring to a simmer and cook for 1 minute. Remove from heat and stir in the remaining butter and parsley. Pour sauce over liver and serve.
