Sicilian Chicken Cacciatore PDF Print E-mail

This chicken is combined with capers and celery to make a delicious flavor!

Ingredients

* 2 Tbs. olive oil
* 1 3-1/2-lb. chicken, cut into 8 pieces
* salt
* pepper
* 1/3 C. red wine vinegar
* 1/2 C. chopped celery
* 1/4 C. capers, rinsed and chopped
* 1 sprig fresh rosemary

Directions

Heat oil in a large skillet over medium heat. Pat the chicken dry with paper towels. Add the chicken pieces and salt and pepper to taste. Cook, turning the pieces occasionally, until golden, about 15 minutes. Tip pan and remove fat. Pour the vinegar over the chicken and bring to a simmer. Scatter the celery, capers and rosemary around the chicken.

Cover and cook, turning the pieces occasionally, about 20 minutes or until chicken is tender and vinegar has evaporated for the most part. Transfer the chicken to a platter. Tip pan and skim off fat with a large spoon. Add a bit of water and scrape the bottom of the pan with a spoon. Pour juices over the chicken and serve.
