Strawberry Tiramisu PDF Print E-mail

Though tiramisu is always delicious, here is a nice way to change it up.

Ingredients


* 3 pints strawberries, washed and hulled
* 1/2 C. orange juice
* 1/4 C. maraschino liqueur
* 1/4 C. sugar
* 1 C. chilled heavy cream
* 8 oz. mascarpone
* 24 Italian lady fingers

Directions


Set aside 2 C. of the prettiest strawberries for garnish. Chop the rest of them. In a large bowl, combine strawberries with orange juice, liqueur and sugar. Let stand at room temperature 1 hour. Meanwhile, place a large bowl and the beaters of an electric mixer in the fridge. When ready, remove the bowl and beaters from the fridge. Pour the cream into the bowl and whip it at high speed until it holds it shape, 4 minutes. With a spatula, gently fold in the mascarpone.

Make a layer of lady fingers in a 9x2-inch round serving dish. Spoon on half of the strawberries and their juice. Spread half of the mascarpone cream over the berries. Repeat with a second layer of ladyfingers, strawberries and cream, spreading the cream smooth with a spatula. Cover and refrigerate for 3-4 hours so the flavors meld. Just before you serve it, slice the rest of the strawberries and arrange them in a nice row on top.
