Egg Dessert Cake PDF Print E-mail

An eggy cake filled with rich potato goodness.

Ingredients

* 4 eggs
* 2 egg yolks
* 1 1/2 C. sugar
* 1 C. pastry flour
* 1/2 C. potato flour
* 1/4 C. butter, melted
* 1/2 tsp. grated lemon rind

Directions

Put eggs, yolks and sugar in top of a double boiler. Place over hot water and beat with a beater until lukewarm. Remove from over water and continue beating until cool and thick. Sift the two flours together a handful of times and add gradually to the egg mixture. Mix well. Add melted butter and lemon rind. Pour into a buttered and floured 12-inch cake pan. Bake in oven at 375 degrees for 45 minutes.

Yield 1 cake.
