I love finding new and fun ways to use this healthy green.
Ingredients
* 1 lb. broccoli * salt * 1/4 C. olive oil * 1 whole garlic clove * pepper * 8 1/2-inch-thick slices white bread
Directions
Trim broccoli, reserving some of the stems. Bring a large saucepan of water to boiling. Add broccoli and salt to taste. Cook until broccoli is tender. Should take 10 minutes. Drain well. Transfer broccoli to a food processor. Add garlic and process until finely chopped. Then add oil through the tube and process until smooth and spreadable. Season with salt and pepper. Toast the all of the bread slices. Spread with warm broccoli puree and serve.
