There are greens on this toast for added nutrition.
Ingredients
* 5 Tbs. olive oil * 2 lg. garlic cloves, peeled and chopped * pinch crushed red pepper flakes * 1 lb. broccoli rabe, washed, trimmed and cut into bite-size pieces * 1/4 C. water * salt * 2 C. canned cranberry beans, drained * 8 1/2-inch thick slices Italian bread, toasted.
Directions
In a large saucepan, put 3 Tbs. oil, half the garlic an the red pepper and cook over medium heat for 1 minute. Add greens, 1/4 C. water and salt to taste. Cover and lower the heat. Cook until the greens are tender, about 10 minutes. Meanwhile, in a medium saucepan, heat the remaining 2 Tbs. oil and garlic 1 minute. Stir in beans, cover, and cook over low heat until heated through, 4 minutes. Coarsely mash the beans. Season to taste. Preheat the grill. Toast the bread on one side until golden brown, 2 minutes. Turn the bread and toast the other side, about 2 minutes. Spread the toast the other side, about 2 minutes. Spread toast with beans. Tops with greens. Serve.
