Avocado and Tomato Bruschetta PDF Print E-mail

Avocado might not seem very Italian, but in this recipe it is!

Ingredients

* 2 med. ripe tomatoes
* 3 Tbs. olive oil
* 1 Tbs. chopped red onion
* salt
* pepper
* 1/2 med. ripe avocado, diced
* 1-2 Tbs. lemon juice
* 1-8 slices Italian bread

Directions

Cut the tomato in half through the stem end. Cut away the core. Squeeze out the seeds and juice. Chop the tomato into 1/2-inch pieces. In a medium bowl, toss the tomatoes with the oil, onion and salt and pepper to taste. Stir in the avocado and lemon juice. Preheat a grill. Toast bread on one side until golden brown, 2 minutes. Turn it and toast on other side for 2 minutes. Top with the tomato mixture. Serve.
